I love quiche. My favorite it broccoli and mushroom. I always wound up eating those little mini-frozen quiche things that you put in the oven, and I know they aren't very healthy, so I decided to try a recipe myself. More food, and it's healthier, and much yummier. I know quiche is pretty easy, it's the typical thing people bring to potlucks even, but still, as simple as it is, it's delicious and so worth making. I usually hate eggs, but with quiche I can make an exception. :3

Ingredients
* 2 tablespoons butter
* 1 onion, minced
* 1 teaspoon minced garlic
* 2 cups chopped fresh broccoli
* 1 (9 inch) unbaked pie crust
* 1 1/2 cups shredded mozzarella cheese
* 4 eggs, well beaten
* 1 1/2 cups milk
* 1 teaspoon salt
* 1/2 teaspoon black pepper
* 1 tablespoon butter, melted
Directions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Over medium-low heat melt butter in a large saucepan. Add onions, garlic and broccoli. Cook slowly, stirring occasionally until the vegetables are soft. Spoon vegetables into crust and sprinkle with cheese.
3. Combine eggs and milk. Season with salt and pepper. Stir in melted butter. Pour egg mixture over vegetables and cheese.
4. Bake in preheated oven for 30 minutes, or until center has set.

It's just as yummy as I expected! Though of course, after making it based on the recipe I now know I want to spice it up a bit next time and add a few of my own things to make it better. Not sure what yet, but I'll come up with something D:
Complaint is that I had to bake it longer than the recipe said, 10 minutes longer. And cutting it revealed a lot of liquid left from the melted cheese and the broccoli. Wonder how to keep that from happening? It wasn;t much liquid, and it didn't ruin it, just made it harder to cut the first time. The liquid drained out quickly though so now it's easy to cut.
