I was in the mood to make some hot sauce so here is the results of my hot sauce experiment.
2019 HOT SAUCE
Ingredients:
6 cups of Scotch bonnet Peppers
6 cups of green thai peppers
13 long hot green peppers
1 170 ml bottle of Scottish Bonnet hot sauce
1 can of green pickled serrano peppers
2 big tomatoes
1 spanish onion
1 mason jar of peaches 452 grams
1 pinch of salt
1 table spoon if chopped up garlic
Directions:
For the thai and the Scotch bonnet peppers I just cut the stems off and dumped them in to the food processor and let the food processor cut them up. For the long hot green peppers I cut them up a little and dumped them in to the food processor and emptied the bottle of hot sauce in to the food processor and let it go until its became nice and smooth.
Next I drained the can of green pickled serrano peppers and added them to the food processor and let it blend. Next I cut up the onion and the tomatoes in to chunks and add a few chunks in to the food processor with a little of the peach juice and let it blend.
Once its nice and smooth dump the contents out in to a pot then add the rest of the onion tomato and the peaches and let the food processor blend until smooth. Now dump every thing in to a pot and let it cook on med low heat until it starts to boil then reduce to low and let it cook until it reduces to about half or so. Next I used a hand blender to blend the hot sauce to get it nice and smooth.
From Chris: ~ Please remember to NOT put this in your refrigerator right away once sealed! Yes, It needs to rest and cool to get the flavors to meld; but a hot jar in a cold refrigerator does NOT mix!
~ Very clever how Undertaker used peaches to not only bring acidity, but sweetness to this as well - that can even go one step further, by grilling the peaches / peppers / onions, plus a touch of apple cider vinegar.
