I had a pokemon themed birthday, so I made 96 Poke-puff inspired cupcakes. I did 48 basic and 48 Delux (pictured here)
Ingredients:
4 Box cake - flavors: Orange, White, Chocolate, Strawberry
Canned Icing - Vanilla (3), Cream Cheese, Cherry, Chocolate
2 Extracts - Mint, Orange
Decorations - Candy Oranges, Fun sized chocolate, jarred cherries, cookie tubes
Jellies (Basic) - Mint, Orange Marmalade, Cherry jelly
Food Color 4 Pack
Part 1 Instructions:
Bake boxed cakes as instructed on box. Each Box makes 24 cupcakes.
Add mint extract and Green Food coloring to Vanilla mix.
Let cool.
Separate batches into 2 batches (12 cupcakes). Choose one pile for Basics and one for Deluxe.
Microwave vanilla icing for 30 seconds (until runny), and Cream Cheese for the chocolate.
Dip all cupcakes top-side down into the icing for the first layer of glaze.
Let all cool until icing is hard.
Part 2 Basics:
Take 12 of your wanted flavor.
Use spoon to generously spread jelly on top of hard icing.
Pop in fridge to solidify
Part 3: Deluxe
Take the undecorated cupcakes.

Cut cookie tubes in half or thirds, with a point so you can stab it into the cupcakes.
Mix orange extract in new Vanilla icing, as well as orange (or yellow and red) food coloring.
Mix mint extract in third Vanilla icing, as well as green (or yellow and blue) food coloring.
Fill piping bags with the needed flavors. (I used a ziplock and star piping tip)
Pipe out swirls of your desired size, leaving some room to show the white underside.
Place decorations on top of swirl.
