You're welcome. This is a very old recipe, known since very ancient times. The bird is gutted, but not plucked, rubbed inside with salt and pepper. Then the bird is covered with a layer of clay and buried in the corners of a fire. When the clay dries and begins to crack, the bird is cooked.
