Claire is a non fatal predator. She sustains herself off the emotions of her prey. The metabolic energy gained from eating the prey's physical body is used to reform them. Her magic means when reformed, all the prey's ailments are healed. She thus does digest her food, but largely as a means to remove it from her body after the emotional response ends (ie, once you succumb to heat exhaustion and oxygen deprivation.) By this point you wouldn't feel a thing.
