Spyro's been training in case Malefor breaks free from his sealing. Both physically, spiritually, and mentally. He doesn't want to have Malefore's "Honeyed-Words" to seduce him.
Also, there's a second reason why he's trained himself up this much. It's to protect all those he loves, such as Cynder and Ember. He doesn't want to lose someone due to his own weakness again.
BTW, I imagine that Spyro would have this kind of body if he were an anthro dragon.
