That "The Art of Animation" educational Disney book even has a model sheet of the Big Bad Wolf on one of the pages! It appears to be a somewhat newer model sheet, given how the wolf almost looks like how he would in the Disney comics, but it's still pretty cool! Another page even has a picture of the Wolf from the "Peter and the Wolf" segment from "Make Mine Music!" How nice of Disney to remember, even if this was 44 years ago!
