Not that weird if you think about it, last names in European society typically reflected one's profession: Potter, Fletcher, Smith, etc. If you combine that with the Japanese tendency to call people by their last name then it would make perfect sense.
Alternatively one could make the assumption that it has to do with the apparently high mortality rate in the adventuring field, and that an etiquette has developed (perhaps subconsciously/unintentionally/organically) around calling each other by profession rather than by name to reduce the sense of personal attachment.
Buuut the series does also have that interesting meta-narrative in which their creation story is that the entire world is a game of D&D being played by Gods, quite literally, which I find VERY amusing and could also potentially be to blame for the naming convention lol
