What exactly are they, if I may ask?

They are pilgrims. Now I don't know if all are the same but they come from Londor, the so called land of hollows, a land that has a dark lord who shall claim the power of the 1st flame for themselves, let it fade and let the age of dark happen. The pilgrims do anything in their power to ensure this happens. The pilgrims, as far as I know, are supposed to die once they reach their purpose, but due to any circumstances, they may fail(like yoel, who failed to die, yet getting him to draw your true strength, you help him fulfill his "quest", thus why he also eventually dies/same with the assassin pilgrim who sets your marriage with Anri). That’s the explanation.
