There is a star at the bottom of the fruit. If you slip the knife to the star and twist you can pry it open and continue to use your muscles to pull it apart. I love them! they are so tasty >w>

FYI, durian contain alcohol and the scent is also strong. So, don't eat it too much and put that away from hotel, guys.
