Pinkie Pie, after managing to get free from Rarity's hypnosis, actually really like being a hypno jester to her. She liked it so much in fact she decided the rest of her friends should join in. Thing is though about being a hypno jester is that you got to be hypnotized. And secondly that they need to be a hypno jester under Rarity. Well Rarity didn't really want to be in charge of a bunch of clowns, so Pinkie decided to hypnotize her as well into being a ringmaster. After all she's got the fashion scene out of the group.

As to why Applejack isn't under, well just wait ;)
