Ghosty writing and today I'm going to show you my little take on the Bánh mì sandwich.
Typically served as a very popular Vienamese streetfood, the Bánh mì is mix between Vietnamese cuisine, with ingredients like fish sauce, cilantro and pickled radish and carrot with French cuisine, like pâté, baguette and mayonnaise.
It's quite easy to prepare, doesn't need a ton of ingredients and tastes great.
Let's eat!
Ingredients:
Baguette
Daikon (or normal radish if you can't get Daikon)
Carrot
Cucumber
Lettuce
Fresh cilantro
Egg
Oil or butter for frying
Salt, pepper
Mayonnaise
Fish sauce
Sesame (roasted)
Pâté
(Optional: Chili)
(Optional: I added some Sambal Manis. It's sweet, savory and not as hot as Sambal Oelek)
Preparation:
Peel Daikon (or normal radish) and carrots and cut into Julienne slices
Prepare a marinade of rice vinegar, water, sugar, salt and a bit of fish sauce and marinate the vegetables for a couple of hours. If you don't want to or if you lack the time, soak the vegetables in vinegar for a couple of minutes.
Wash lettuce and cilantro, tear the lettuce leafs into pieces and roughly chop the cilantro.
Peel the cucumber and cut lengthwise into slices.
Crack the egg and carefully fry in a non-stick pan with some oil or butter on medium heat, Sunny side up egg.
Heat up the baguette in the oven before filling.
Cut open the baguette lengthwise (don't cut too deep or the filling will fall out the other side), carefully sprinkle with fish sauce, spread with a generous amount of Pâté, then add mayonnaise (or some other sauce you like), Sambal Manis, cucumber, pickled daikon and carrot, lettuce and fresh cilantro to your taste.
(Optional: add fresh chili if you want it hot)
Right before serving, top the Bánh mì with the Sunny side up egg and some roasted sesame.
