Grilled Lemon Curry Zucchini
¼ tsp curry
½ tsp garlic powder
½ tsp lemon pepper
¼ tsp basil
1 tbsp butter
½ tbsp parmesan cheese
2 tsp lemon juice
3 small or medium zucchini
Slice zucchini lengthwise in half. Then slice diagonal slits in the flesh of the zucchini.
Melt the butter in a little dish. Add the other ingredients to the melted butter.
When ready to grill your zucchini, put zucchini on the grill and brush part of the sauce on the cut flesh of the squash.
Once it has cooked for several minutes flip over the zucchini. Brush the bottoms of the zucchini. Flip back over to finish cooking the zucchini and brush with remaining sauce.
Cooking times will depend on the size of your zucchini, but anticipate grilling for about 8-10 minutes per side on a medium-heat grill.
About 15 minutes actually - and your best bet is to make a compound butter first!
(That is, a cold stick of butter on a piece of plastic wrap, you add the spices, wrap it up and mash it all together and re-refrigerate - its a great way to flavor up plain butter - though I used 2 - 3 tablespoons since I had more zucchinis to cover!)
Didn't need the garlic powder either, my lemon pepper grinder already has garlic flakes in it :B
You can skip the cheese if you're vegan (or use nutritional yeast) and enjoy!
