The enemy scaling doesn't care about what you've been leveling up in though, as anyone who's spent several levels just maxing their Speech, Smithing, or Alchemy levels can attest when they step back into the wilderness and get stomped by everything that moves

You know, I'm surprised that Sheogorath hasn't done anything about them pesky dragons yes. True, there is a delicious madness about the people of Tamriel being brought to heel by a species thought extinct, but it is a positively BORING Endgame. Either the dragons will wipe out all the races of Nirn, or subjugate them to a dull repetitive lives of servitude. Madness will be culled from the minds of such a deliciously chaotic menagerie of races!
Hell, the dragons don't even have GENDERS. True, that is unusual and therefore interesting.....but it also so godly frustrating since sex is a cornerstone of insanity! Know, Sheogorath cannot let this stand! But what to do, what to do? Turn them all into mice? To obvious. Turn half into mice and the other half into cheese? Better, but Sidius still owes him from the last plague, like hell if he's gonna give the Lord of the void anything till that's paid up.

..........HAHAHAHAHAHAHAHAHAAAAAAA that is, by far, the FUNNIEST joke I've ever heard. Thinking that Daedric Princes give a flying cow pat about playing nice with ANYTHING, even the Aedra themselves, let alone their creation. In fact, I seem to recall Molag Bol taking a dragon that had fallen into his realm, ripping it's soul from it's body, and twisting said body into a champion for himself.

When thinking Alduin (or dragons in general) as an aspect of Alduin, that does not mean they are one in the same. Do you read Marvel comics? Think of it like the relationship between Galactus and his heralds.......actually, thinking about it in that way, gives some ideas. Anyway, the dragons wield A fraction of Akatosh's power and, in return, they are meant to be as his hands in the world. That does not mean that they are unbeatable, or that they can choose not to carry out their Master's will.
Is not about what daedrics care about or not...it's about HOW MUCH THEY CAN ACTUALLY DO.Alduin and company plays a relevant role in the utimate plans of Akatosh for the mortal world (that is: destroying it to start over, creation/destruction cycle, etc) ...so no..I don't think Sheo can INTERRUPT/AFFECT THEM in the big,whole scale sense...yes, you have occassional encounters/interactions between dragons and daedric princes, but they are scarce and irrelevant in the big scope of things. Dragons primary sphere of influence is precisely the mortal realms, Paarthunax himself decided to help mortals because he saw how power and greed corrupted Alduin and the purpose layed on him by Akatosh.
Ehhhh, considering that the Dragonborn, in a normal timeline, erases Alduin from existences, I think you're giving the World Eater a bit TOO much credit. The Aedra are powerful, excessively so, but it doesn't seem they are omnipotent or all knowing. The fact that Alduin never fulfilled his purpose as World Eater is proof of this.
I will agree that, while the dragons are on the mortal plane, there is likely very little Sheogorath can do to them. But.....if any dragon were to cross into the mad princes realm, can we agree they would be fair game?

I did OK with bows.
Although I did fall down a snowy mountain once, on fire, while triggering Night Vision so I was completely blinded by white, fight a Dragon. A big, BIG rock outcrop to run around, helped lots.
I don't think I dared try melee with them until I was lvl 60. I killed a lot of dragons, a lot. Made some light armour out of their bones...

I feel like there's something to be said about not taking life (and yourself) so deadly seriously and allowing yourself to enjoy some goofy, obnoxiously self-indulgent fun now and then.

I had a dragon wipe out an entire Imperial camp while it was chasing me, including the horse. I finally take it down, surrounded by corpses, dragon bones, a dead horse. The camp legate (unkillable) was nearby. He looks at me and gives the line:
