Nori is always best eaten with rice. If you've got salmon, even better because you can make an onigiri or makeshift sushi rolls.

I have never homemade any sushi. I should try that sometime, should be fun.

It's super fun and tasty. It's also great since you can put whatever you'd like in it. However if you choose to use raw fish, do make sure to use only sushi grade fish. And keep in mind that you should only consume it raw on the same day you buy it. After that you can still eat it, just make sure to cook it thoroughly. Cooked fish can work just as well in sushi anyway. Best fish to use, that I've found, would be salmon, tuna, or mackerel (sawara sushi). On that note, using all veggies is totally okay too. In that case, cucumber, julienne carrot, and avocado are a good starting point. Combining fish and veggies is awesome too.
