Aha. I am a chef myself. (Self taught) my main areas of cooking are Asian, Indian, Italian, Scandinavian, American and Mexican. I mixed an italian dish with mexican a few days back when I made a taco lasagna :3

You have to roll out your rice on your sushi mat until theres only like 1 or 1/2 in. lelft of seaweed, then you roll from the otherside keeping fairly firm but not tight to squish it, and when you get to the end of rolling your sushi give it a good final squeeze just to shape it into anything.
Also its good to have a bowl of water to keep your rice from sticking just wet your palms and roll your rice.
misting your sushi mat really lightly with water is also a good idea :D
