For science, give him the power to flex the D-Brane that makes up the universe, allowing him to increase his real and apparent mass at will. Since he's fluctuating a dimensional structure, his additional poundage increases in resilience as it increases in qualtity -- he could, in theory, survive a nuclear bomb, but he'd be too awkwardly bulky to move until he recued. (Note that the hidden parts of the D-Brane are called the "bulk".)
For magic, one of the simplest is to have him blessed by Budai, whose fat form was resilient to all damage. Friend to all people (especially children) and symbol of plenty, he gives the powers of strength and toughness -- but you must bear his abundant figure to make use of them.
Of course, you could always go with an alien nanite colony that draws on universal energies to make the increased fat serve as a suit of power armor. Just try not to let it get out of hand, or we're back to "completely invulnerable = completely immobile".
