Ah, the problem of buoyancy and body mass distribution. Would I recommend trying to float lying down on your back or front next time? Usually it's easier than trying to stay upright in the water, and I'd think laying flat across the water's surface would keep all of you afloat.
Because water physics! I think. But then again I'm not an expert with inflatables.
