My pieces tend to average around 3 hours from start to finish when in color with no backgrounds.

It depends on the piece, but that's the average, yes. For drawing taurs, you need an understanding of both 'human' and animal anatomy so that you can join the two without making it look awkward. You may want to page through  kacey's gallery. She draws quite a few of them.
