They're stuffed, which accounts for their shape-holding in one sense, and I think she said that knitting the horn-curl was like she started turning a sock and didn't stop (while decreasing at whatever rate, Ig?).
I never did enough knitting to tell much abt their construction by looking at them, I stopped knitting entirely when I learned how to crochet. (And then I stopped crocheting when I was tired of my yarn collection taking over my life, LMAO)
