The phrase 'never trust a skinny chef' is one that Tamra takes to heart. She didn't intentionally bloat herself to the point of being a massive pink beanbag chair, but when you love both making and sampling food as much as she does it's inevitable. As such she was a natural hire for the Fooders kitchen staff, much to the delight of all the other employees. Despite the fact that she can carry her bulk around just fine, her stamina very quickly runs out if she exerts herself, hence why she isn't a waitress.
