That's my family crest, actually.
Dillon comes from the french Di Leon, meaning "of lion". The name actually goes back to some of Richard the Lionheart's family who moved to France after his death, and changed their surname to Lionheart. Over the years it was mutilated by the French to Di Leon. Some of the family got land in Ireland after it was conquered by the English (all that noble inbreeding, the Di Leons still had relatives in high places in England). So they were among the first English lords of Ireland. The name was again mutilated, by gaelic tongues into "Dillon". Eventually they were accepted as being Irish when they stood up against England in one of the many conflicts between England and Ireland.
And of course with a name meaning "of lion", the crest is (surprise-surprise!) of a lion.
