There's a fair bit of inter-species breeding on the islands, and while many species don't hybridize with eachother, children tend to be one species, or the other of the two parents, It does open the playing field for birth Defects. Devon's is that he has floppy ears either by defect, or becase someone in his family had them in his family line.

The way the rules of the islands work is that if an pair of animals can hybridize IRL, they can hybridize on the islands re: Lion + Tiger = Liger. If they CAN'T they create children of one or the other parent, or a species in their genetic line. So Cat + Dog = Cat, dog or, if they both had it in both their family genetics, a bear or some other species.
