For a liolf who is always on the go, I find it hard to sit down and eat healthy. Mostly because Im surrounded by fast food joints. So I decided to fix my own meals, hence where this one came from.
Ingredients:
1 Whole Bellpepper (Recommended Yellow or Orange for Sweet Flavor)
Cherry Tomatoes
Mozzarella Cheese
Basil
Oregano
Olive Oil
Thick Balsamic Vinaigrette
1. Make sure all your produce is washed thoroughly. Take your Bellpepper and cut it down the middle. Rinse the pepper under cool water and begin removing the seeds. Once hollowed, gently dry it out with your paper towel and make sure all the moisture is gone.
2. Lay your Mozzarella disks into the now empty pepper. I find that the creamy disks work the best, but fair warning, with lots of cream comes the risk of getting moldy after a few days. (Luckily the disks can be utilized in other dishes too).
3. Take a ceramic coffee mug and pour 1 Tbsp of thick Balsamic into it. For those who are curious, thin balsamic has a bit of a sour taste, where as the aged balsamic with a thicker consistency tends to be sweeter and with a bir of a robust refined flavor. Pour about 4 Tbsp of Extra Virgin Olive Oil into the cup and sprinkle a dash or tao of Oregano.
4. Place your Basil Sprigs and Cherry Tomatoes on top of the Mozzerella. Then, begin to mix your ingredients from within the cup thoroughly until an almost uniform color. Pour the contents into your Pepper Boats and make sure to distribute as evenly as possible. You can seal this and set it in the fridge overnight and it will be perfect for lunch the next morning :3
