I should try it out, but I don't have any gouache here. Last year I tried the same with acrylics, which was pretty horrible XD

I think you'll like gouache more then. It's like the lovechild of acrylics and watercolors. The same opaqueness of acrylics with the smoothness of watercolor, and easy to water down without making the paint look too chalky.
If you're using acrylics, don't water them down. Go buy some matte medium and mix it with the acrylic paint to thin it down. Makes it easier to work with and a nice way of building up layers of transparency too. I highly recommend experimenting with mediums just in general, but especially try out the matte medium.
