Horribly off season for this one, but I ran into a box of sturbies for sale where I work, so I just wanted to share this recipes with my fellow leafbiters. It's another side dish to go with other meals that supplements a meatless diet with tasty cheese.
Dressing For 3 to 4 salad servings
- A handful of sturbies (use the least pretty ones for the dressing, the others for the salad itself)
- 1 Tablespoon of balsamic vinegar
- 1 tablespoon of sugar. You can use a little more if the sturbies aren't very sweet (which is likely unless you get them in mid spring to early summer)
10 seconds in a blender and you've got yourself a dressing :D
Salad
- Soft leafies like field lettuce, baby spinach or romaine
- 100 grams of slightly sharp sheep feta
- Depending on their size, 6 to 12 sturbies
The leafies are the bed, you can arrange the ingredients any way you like and serve it all with 2 to 3 tablespoons of dressing. If you're a proper fruit ninja you should throw your shuriken or swipe your wakizashi to slice the sturbies, but that's merely a recommendation. Any kitchen knife could do it.
