In general i'm using whatever i find, but i prefer to use Skyrim assets because they look great and fit with my prefered fantasy style, are low to mid poly and very easy to work with (and rendering doesn't fry my PC, which is always a good thing), there are a ton of those little miscellaneous items that are important to bring an image to life (drinks and food in the tavern for example).
