Pierogi Casserole (Vegetarian) (How2vid Included!)
Sorry for the delay!!! I got super sick with a cold last week and this week has been hell with my first bladder infection so I'm just waiting for the 3rd unlucky thing at this point. But onto the food!!!
This recipe came from a Vegetarian Cookbook my husband and I found at Goodwill and we really wanted to try this recipe out first!!
Ingredients:
1 Bag Shredded Cabbage (16 oz)
1 Bag Sauerkraut (16 oz)
1/4 Cup Apple Cider OR Apple Juice
1/2 Tsp Caraway Seeds
1/8th Tsp Ground Black Pepper
1 Box Frozen Pierogi
2 Tbs Chopped Dill
2 Tbs Butter
Instructions:
Combine the cabbage, sauerkraut, apple cider/juice, caraway seeds, and black pepper in a casserole dish
(IF YOU ARE MICROWAVING THEN HEAT THIS MIXTURE UP FOR 5 MINUTES ON HIGH, if your doing the oven then just continue)
Place the pierogi over the casserole mixture.
Then sprinkle your dill over it and place your butter around.
If you are microwaving then cover and cook on high for 5-7 minutes.
If you are putting it in the oven then put it in at 325 Degrees, cover with foil and cook for 30 minutes or until pierogi are no longer frozen

We did it in the oven, forewarning unless the coleslaw mix is cooked all the way through it makes everything taste kinda meh. Maybe add less coleslaw mix like around half compared to the sauerkraut cuz it was SUPER crunchy as well which was offputting for the rest of the meal too
