We don't see more of her because people keep on drawing her with clothes on.
And yes, she's Caitian. As for the Kzinti, the only reason they're part of Star Trek is because someone rewrote a Niven story to make it a Star Trek Animated story. (No, I don't like Kzinti in my Star Trek, how'd you guess?)
