Bear's garlic bratwurst, summer squash & cucumber salat
Hey everybody...
Ghosty writing and this was dinner yesterday.
The typical "cooking-cub"-dinner style ...which basically is "Oh, let's see what I got left in the fride/pantry" ^.^'
So we got some nice bear's garlic bratwurst from a tiny local butcher store, some summer squash and tomatoes from my parent's garden and some cucumber salad with a nice yoghurt dressing (with a cumcumber from my parent's garden as well).
All prepared with fresh herbs and some love :3
Begin with your Mis en place, then start salad first, as it will take a bit to prepare, then just do the rest in parallel, it's really not much work.
You'll need:
- Bear's garlic bratwurst (as many as you like)
- 1 big summer squash (or 2 smaller ones)
- 2-3 tomatoes
- 1 red onion
- 1-2 garlic cloves
- fresh herbs (basil, oregano, rosemary, thyme, dill)
- 2 cucumbers
- salt, pepper, spices to your taste (Iused Ingo Holland "Mallorquin herb garden", "Roman spice", "Tuscan pasta spice")
- olive oil
- (optional: a little knob of butter)
- white balsamic vinegar
- (optional: a dash of lime juice)
- (greek) yoghurt
Cucumber salad:
Peel cucumbers and slice finely. Add a good pinch of salt, mix it in, then let it rest for a while.
The salt will draw out some of the water of the cucumbers, making your salad much less watery. Press out the water gently with your hands.
Peel and chop the onion. Take a part of it, and add it to the cucumber slices.
Now add freshly chopped dill (if you do not have that, frozen dill is just fine. Just don't use dried dill, it loses much of it's aroma), a dash of olive oil, a dash of vinegar, sprinkle in some lime juice and add about 3-4 Tbsp of greek yoghurt. Or more, if you like.
Season with salt and pepper.
Stir-fried summer squash
Peel your summer squash, if the skin has become too thick to eat, scrape out the seeds. and cut into little cubes (about a cm wide).
Wash tomatoes, remove the watery seeds as well (they only add water and no taste) and cut into small pieces.
Peel onion (if you haven't already done so) and garlic and chop them. The garlic finely, the onion pieces can stay a little larger.
Wash your herbs, tap them dry and chop finely.
In a large enough pan, heat up some olive oil, add a little butter, then gently caramelize the onion. Add garlic and summer squash and continue to fry, until the squash is done. I prefer it not too soft, but that is totally up to you :)
Season to your taste with salt, pepper, spices and nice amount of fresh herbs, then add the tomatoes, mix them in and just let them warm up in your hot pan.
While your squash is frying, barbecue your bratwurst on your grill or fry it in a pan with same fat until brown and crispy.
Dress everything on a large plate, add some roughly cut basil and serve with your cucumber salad.
