I mean, I'm trying to think of what jobs can't be done. A professional artist would have to be creative about how to apply their craft, same for professional athletes. Tbh even if all they can do is sell their craft, that money can be used to help the hive acquire goods and services.
And even then, larger hives are more likely to have space for and embrace this entertainment and cultural enrichment for their own sake.

There are so many questions that come forth from this. If a succubat grows a tail maw, is it only for defense, or could it eat or even make sounds with it?
Defense from what, exactly?
Is the bat or the host in control of the tail? If both, how?
And assuming the most extreme of cases, in that an infected person falls in the hands of well-meaning, self-proclaimed "exorcists"... what happens if they manage to sever host and bat?

The bat is akin to the 3rd brainlobe of the host. So both, but early actions seem like the bat's doing, while after the host fully accepts it, they can consciously control the tail and see through the 3rd eye and everything
The host would retain their transformed appearance, could lose use of their tail or legs as the 'exorcist' injures their lower spine cord. Would still be loyal to the hive if they were before, just without constant reinforcement in the form of brain chemicals from the bat.

For some reason the idea of them still doing jobs just has me picturing some guy named Frank getting a case of the Bats before having to go back as a sewage pipe manager as a busty succubat.

In serious setting talk, there are male succubats, and succubats target their own gender. So in normal situations, if Frank became a girl, she probably wanted to be a girl. :v

Nah man, with Frank it was a mistake. It totally isn't a result of him being raised in an extremely traditional household and repressing any sexual tendencies. He was only single because he hadn't met the right girl yet! But now if he's a female he may as well enjoy it, right? All that pornography was bought after the change! Don't pay attention to the publication dates, he got it in bulk afterwards for reasons!
All kidding aside, that's a neat detail about them. Would a succubat actively avoid someone of the opposite gender, or possibly try and assist another succubat in latching on? I actually like these things a lot. Usually this type of TF's is kinda mean spirited. The idea that the hive would still be willing to let a person more or less get back to their life is neat, revealing details about your co-workers preferences aside.

Basically there are two reasons why a succubat would go for the wrong gender: A host purposefully paired the two, or a lone succubat came across a lone, vulnerable target. If you have a lot of succubats, the same gender ones will jump to action more willingly, and if you have a lot of potential hosts, succubats will be drawn to people with the same gender, even if those people don't consider themselves as such yet, like Frank in your example.
Honestly people with injuries can still work as succubats. Less serious injuries can be smoothed over by the change, and more serious injuries still leave you with someone smart and capable. Really for conscious choices by hives, the choice comes down to their morality. The main reason to not convert someone completely incapable of helping, is it could be torture. Succubats use hormonal manipulation to make people want to help the hive, and those who don't or can't can have issues as they feel more insecure and bad about themselves. But yeah. management, planning, teaching, and similar, less active jobs are all still important for guiding and growing the hive.

I mean, as ideal as they might sound to a directionless or dysphoric peeps, there are DEF people who see them and think "I have to fight this menace" and not every hive has a patient or peaceful queen.
Not everyone is cool with looking so demonic, or with having a goal and desire as ingrained into them as hunger. Some people are super repulsed by any degree of their brain being messed with.

Mmm, but why is this the usual outcome? Is there pressure to join? Why is there pressure to join? Is there a feeling of being left out? Or does the hive twist a person to try and force their significant other to join? At what point do these parasites or sybiotes go from cute to being a threat to the world society at large? They don't exactly ask for permission to make you a host, very much pushing them into the parasite category. Where does actual joy in joining your significant other end and emotion forced on by the parasite begin? If it is merging with the nervous system then is its adding itself to your own mind?
Furthermore you said it changes peoples loyalty to be loyal to the queen over any lord or government, that's a huge change to make someone even consider treason. Huge change in mental preference, which begs further questions of how does any hive member truly trust that their actions are really their own choice? The fact you mention taking over communities by force further reinforces that dispute appearances these things are very much a threat, and that non hive members are probably right to distrust or scorn hive members.
Corruption is a millstone. It wears down an aspect of you to bring about desired behaviors. In the case of succubats, it's the part of you that hates the hive, and wants to resist it.
People trust their actions because they came to the conclusions to follow the hive with their own brainmeats. They still have a full idea of their experience and beliefs through their lives to now, just like most people.
People's fears of hives are not necessarily accurate, but neither are they unfounded.. Some hives are nice, some are definitely not. It comes down to the queen's self control, and her abiltiy to handle her hunger, as well as the mentality of succubats in the hive. Even normal unmodified people can be warlike and bloodthirsty, let alone people with literal endless hunger and the ability to turn anyone into an unquestioning, hulking soldier with crown crabs. Some might decide that everyone would be better off with healthy, strong bodies, and symbiotes that can help smooth over brain chemistry imbalances like depression.

I am immesnsely supprised that the governments of the world this si happening in doesn't go down the idea of containing the hives (though this is probably just to prevent any sad feels in the pictures) other than that my remaining question is what happens to peoples nipples when they get that weird chitten on them? no more nipples and milking?
Governments and many religious bodies hate hives. They take away citizens and go against the church's preaching of how hives are bad demons from hell. The issues come up when either people don't have the tech to find hives hives, the resources to hunt down ever report, or the manpower to deal with hives that are as powerful as a country.
In modern times, some corporations are run by hives, and use their profits or product to feed the queen, While some hives are, again, ancient countries with peace agreements. Usually with external agreements treating any expansion of outward conversion as an act of war. In addition to, again, hives who just disappear and grow in secret.
Most, successful queens live with the knowledge that the moment they get caught doing something overtly 'evil', society is going to come down on them like a ton of bricks. It just becomes a matter of hoping things never get so dire that they forget that. Or, at least, by the time they do, they have the means to fight back.

I'm not really big on discussing edge cases I'm not being paid for. I'd rather focus on the general details, and let other peeps figure out what their special baby protagonist is like in relation to the norm.
