I've been wondering how much behaviour the characters of Blade Under Mask share with their real world counterparts, which of course got me thinking about the risks involved with a mantis geisha. Is this where the training comes in, and are they prized for the same reason pufferfish sushi has a following, because there's a risk you might not survive the experience?

Very likely... but I get the impression that Asami is doing this to protect her from someone who will not treat her properly or kindly. But has to keep the appearance of the harsh mistress up as that's how Nae and the others regularly see her. Though, also getting the impression the slap was harder than intended because Nae answered her back and angered her.
Man, I still think that Asami is the one who is the target since the start of this comic.
Let me explain about this: We all know that Nae is plagued with nightmares since the debut of this story and that, off course, she is the main protagonist. But the thing that I started to think about it is that Asami seems to get even more mad as we advance with all those pages. This is something that I could tell that she does not go like that by herself: She needs something to trigger it. As we know of, Nae is kinda the trigger character. Maybe, very later on, I think she will really to result to destroy herself by madness while resulting the pain toward the others, mainly the one who could trigger this effect.
BUT, this is just a theory of mine there. My other one is simply that she could be like that aunt granny personality from that Disney movie, Cinderella, as an evil aunt personality.

I get the impression asami is realizing she doesnt REALLY want to let Nae go... at least not to the guy who bought her, and shes getting angry because Nae thinks this is her chance while Asami thinks its a bad idea, talking back to her is frustrasting her because its not what she thinks is best and shes taking it out on nae... maybe... if that makes any sense.

Ah, White Mantis. Im very sorry you have a fandom of such bloodthirsty uneducated people.
Instead of asking questions about why Asami doing this, maybe thinking about how she used to be herself when she was Nae's age, allof them just want to increase violence. Bad deeds of other people will never justify violence of "righteous" ones, since it will never help to prevent violence, not in the whole world, but in hearts and minds of ordinary people.
Asami is not evil. Something that we call "evil" does not even exist, there is only lack of love. Those who never recieved enough love in their lives - suffer, they turn to violence, and trully good people will only feel pitty towards them, because trully good people unable to hate.
We saw that Asami has good feelings for Nae, and I am rooting for Asami to listen to those feelings throughout whole comics. And Im sorry for all the people that want to strangle, or hit, or kill Asami, you can never justify your violence regardless of the situation. Be smarter, be kinder, be wiser, than people who find violence to be solution in any situation.[b]

I am trying very hard not to keep thinking about Kurohasu right now...but man, ease up, Asami! I know you think you're protecting her, but this is her dream and if she's willing to take the chance, it's her choice!

I.... I can't believe it... I mean Kurohasu is big and rough, but surely you can just talk to him beforehand, and make sure he knows the rules regarding not damaging the "merchandise".....
But then, Asami is crazy roach-lady. She's so tsundere about showing her love for her workers...... On the other hand, perhaps she fears that Nae will have another 'attack' and somehow anger Kurohasu, and end up crippled for it? And of course, she'd probably prefer some staid older gentleman to be Nae's first, to go easy on her.
