Heya everybody!
The cooking cubs
Kuraiko and
Ghosty are finally together again for a week, while Kurai is visiting Ghosty at his place. :)
And of course that means we got some tasty food for you :3
Some nice Orecchiette pasta (which is great for thick sauces) with a rich tomato-cream sauce and fresh veggies
Ingredients
1/2 red onion
2 carrots
1 piece of celery (about a finger thick)
1 leek
1/2 broccoli (about a handful of florets)
1 red pointed pepper
Fresh basil & oregano
1 Tbsp tomato paste
1 Tsp honey
400-450ml Passata / sieved tomatoes
200ml cream or Cremefine
salt, pepper, spices to your taste (Ingo Holland "Roman spice", "Tuscan pasta spice" and "Majorcan herb garden"
a dash of water
olive oil, butter
Parmigiano cheese
Preparation:
Peel onion and chop finely. Wash and clean you vegetables. Chop up your herbs.
Take celery, onion, part of the carrots, pointed pepper and leek and cut it into finer cubes and pieces. Take the rest and cut it into some bigger cube, pieces or slices.
In a large pan, heat up a knob of butter and a dash of olive oil.
Prepare a mirepoix by roasting celery, carrot, onion, leek and pointed pepper.
Add honey and carefully caramelize the veggies.
Now add some tomato paste, continue to fry, then deglace with a dash of water (or broth, wine).
Pour in the tomatoes and mix well. Carefully add the bigger cuts of the vegetables according to their cooking time (carrots first, as they are the hardest, then work your way up to the softer vegetables) and cook them until the desired softness is reached.
Add the cream or Cremefine, stir well, then season to your taste with salt, pepper and spices.
Cook your pasta in plenty of salted water in the meantime.
Shortly before serving, mix in fresh herbs.
Dress everything on a soup plate, sprinkle with some roughly cut basil and shaved Parmigiano cheese and serve with a nice side salad.

Looks better somehow. And those thin slices have a wonderful aroma and are more stable than finely grated Parmigiano that will quickly melt into oblivion... so if you spoon up a pice of a slice, sauce and pasta, you'll get the different flavors more differentiated (I hope I explained it right, English is not our first language)
