Sweet and spicy steak stir-fry

Fried Rice
- 2 cups rice of choice (White or Jasmine is suggested)
- 4 cups hot water
- 2 tablespoons butter (or margarine or whatever)
Sauce
- 1 cup pineapple juice
-2-4 tablespoons of soy sauce (depending on sodium diets)
- 1 tablespoon butter
-1 package of your favorite Asian seasoning. We used a local brand of sweet and spicy seasoning.
- 1 clove garlic (or more if you're a garlic fanatic like us)
Main ingredients
- 1 large bell pepper of any color (we used green)
- 4 small steaks (cheap cuts)
- 1 cup soy beans (edamame)
- 1 cup bamboo shoots, thinly sliced
- 1 cup water chestnuts
- 2 cups diced pineapple
Instructions
Put rice, water, and butter into a sauce-pan. Place onto a burner at high heat until the water comes to a boil. Lower heat to low, cover the sauce-pan with a lid and let simmer for approximately 15 minutes or until all the water has absorbed into the rice. Be sure to mix the rice occasionally with a heat-safe spoon as to keep the rice from sticking or burning to the bottom of the pan.
While the rice is cooking put all sauce ingredients except for the seasoning packet into a saute pan or wok on medium heat until the butter has melted. Before adding the garlic make sure it is peeled and minced! Make sure all the ingredients are well incorporated into the sauce.
Place your meat into the pan and cover, let sear until it begins to brown. Flip the meat and cook to a temperature that is below desired done-ness (We do medium-rare with a bit of pink in the center) Use a thermometer to help aid the meat-cooking process. Once the meat is close to done, remove it from the pan and set it on a plate. Let it rest, do not cut it at this time.
Start the veggies immediately! Start with your raw ingredients. Put firmer and thicker pieces of veggies in first as they take longer to cook. Add all veggies except for pineapples into the sauce mix and let steam for 10 minutes or until soft and tender. While everything is cooking cut your steak into thin strips. Add the pineapple and return the stripped meat into the pan. Sprinkle your seasoning into the broth and veggie mixture while stirring well to incorporate.
Then plate, rice on the bottom and veggies on the top. Add salt, pepper, or soy sauce to taste. Scrambled eggs may also be incorporated into the rice if desired by simply scrambling eggs into a pan and mixing them into your rice.
The white rice may be substituted for any type of rice or asian-style noodles! Follow the directions on the packages!
