It's almost impossible to pick favorites out of the 30+ book series, I've read them all multiple times.
Some books are less "ha ha" funny and more "social satire" funny. Originally I just read them in order of publication. I recommend reading them all!
The best I can do is pick 5:
Witches Abroad
Moving Pictures
Soul Music
Interesting Times

I would not call these "the best"- the Discworld series consists of about 4-6 series, each sorta focusing on different characters and/or locations on the Disc. These books represent a good cross-section.
