Stuff I can scratch together with shit from my pantry: crushed graham cracker layer on the bottom, chocolate pudding, and toasted marshmallows on top. S'mores puddings are really, really good, and so easy to make! Just make sure you're using a heatproof serving dish for when you pass a blowtorch over the marshmallows. These were toasted with my dab lighter, which was slow going. Picked up a proper kitchen torch and now it's way easier.
