This is the dish I came up with for our Euro menu at Sharp, our student-run restaurant.
We opened in October and when October comes to mind, I think pumpkins. So, I pitched the idea of a carrot pumpkin risotto for our vegetarian option. It is made with arborio rice, roasted pumpkins, carrots, white wine, vegetable stock, pumpkin carrot puree and parmesan cheese. It is very tasty. I'm glad I came up with it. I made sure to save the recipe so that I may make it again at home.
This risotto isn't being served at Sharp anymore since our menu has changed to Middle Eastern flavors.
The furs that live in the Portland, Oregon area are welcome to dine at Sharp for lunch.
