Curiosity about scents might drive an anthro people, depending on if the morph goes that far, to do a lot of work on chemistry much earlier than humans or other being without sensitive noses. The knowledge would also provide much greater detail from scents, such as knowing how the body produces ammonia would allow more accurate details of time of death, age of tracks being followed, etc. You'd also get this info much faster than a lab doing a traditional analysis. This goes of course the other way, with various methods of erasing scents and confusing a tracker/analyzer.
