Honestly that's tough to say, I thought the remake of 1 on the SNES wasn't too bad if you don't mind quite a bit of grinding.
Personally I think IV, V, and VI on the DS might be a good way to go. V has definitely been my favorite so far, and I'm playing through VII right now which just came out on the 3DS.
