A thing called Evolution+. It's based off the Pokemon's previous evolution to affect its second and third stage. Your pokemon grows more based off its transition from one evo to the second and so on. When you desist an evolution every 10 levels, that growth during the evo transition will increase and result in taller future evolutions, but only so slightly. This effect ranges from +1 to +6; +6 being the most out of this. For a pokemon that evolves only once, this is all the information you need.
Now for a Pokemon with a second evolution, the + effect carries over. Braixen with a +6 will have Delphox+6's height when it evolves, as soon as it evolves. Same thing for a +1 and so on. Keep in mind as soon as it hits level 100, as any evolving with levelups, will not.

I think that for multi-stage evolutions, it shouldn't just carry over, but have a compounding effect.
For instance, a +6 Braixen (evolved at level 76) that immediately evolved again at level 77 (which would make for a +4 Delphox if it wasn't already boosted), that ought to stack and result in a +10 'Phox. Hold off for another 19 levels instead, and your partner is now a massive +12 titan!
Of course, then any Pokemon that evolves after level 40 would only be able to get to a maximum of +11 (or +10, for those rare few that go past 50 e.g. Dragonite) which is still pretty impressive (and those 'Mons tend to be fairly tall by default anyway)
I mean, I get that the +6 limit is probably based on in-battle stat modifier moves and going beyond that kind of breaks precedent, but... maybe I just like bigger. :V
