Basically, they build a paper nest in the ground, usually an abandoned burrow or the like.

Used to spray the nest with WD40, asphixiating them. Also covered the entrance of ground nests with dry grass clippings and a dash of kerosene. Then stand off with a can of Instant Start and a Bic lighter. The resulting fire pulls all the O2 out of the ground. A mole then pushes the nest out.
As for favorite wasps, the Cicada Killer tops the list. The city I work for actually has signage warning people not to disturb them.

Although they appear to attack anything that moves near their territories, male cicada killers are actually investigating anything that might be a female cicada killer ready to mate.

I found a bald faced hornet nest on my family's property where my nephew could potentially stumble on to it. I waited until after dark and sprayed the entrance with wasp spray.
Last time before that was a large hornet nest found when cutting brush. It was left alone and when the peafowl we had at the time found it, they ate the hornets one by one as they exited the nest then tore the nest apart with their feet and ate the larvae.
Gasoline is the best way to kill a fire ant nest. Pour a cup on the mound and the fumes will suffocate them.
