Otherwise, why would Pikachu be classed, in game, as an Electric Mouse?

That's because it was designed as a mouse, and to be a mouse. :) Eevee is an amalgamate of animals, if you want to describe it that way. It's non-descript, because it can be whatever it wants to be.

Well considering the only other pokemon to split into multiple types in a comparable manner is the hidden legendary Arceus, who is already considered by many to be the de-facto god of all pokemon, I can therefore safely deduct that eevees are the pokemon equivalent of Jesus.
