Had fixed up this lil' baked chicken dinner fer me an m'roomie an friends a few nights ago that turned out rather well...
ingredients:
1 pck. of boneless chicken breasts (this had a 5 count)
1 bag of yokeless egg noodles (or use preffed kind)
1 carton of spring lettuce
a few shakes from a carton of sliced mushrooms (maybe a pawful total)
1 medium sized sliced tomato
1 medium sized sliced onion
1 bag of broccoli
small portions of 4 bell peppers (red, orange, yellow & green)
1 can of cream of chicken soup
1 can of cream of celery soup
some ranch dressing (or use preffed dressing)
lemon juice
garlic & herb seasonings
directions:
Quite quick an easy despite it's long list'a ingredients, I simply emptied a can of cream of celery inta a small sauce pot an added in diced up portions of the bell peppers, mushrooms, onions an set'em ta medium heat ta cook while I took a medium cookie sheet, lined it in foil then lay 4 of the 5 chicken breasts on it ta bake at 350 in the oven fer 45 mins...
In a measurin' cup I pour the cream of chicken soup contents an add g&h seasonings an such (season ta preferences) wisk then baste the chicken as it bakes every 10 mins or so.
The broccoli was a frozen bag so follow directions as per instructed heh
the 5th chicken breast ta cut inta thin strips an fried in a small skillet till lightly golden then divided inta 4 smaller salad bowls that had the lettuce, tomato, mushroom and onion then topped with a dollop of ranch dressing (or use pref dressing)
the noodles were jus' boiled then served with the celery/pepper sauce on top (as in top pic1)
and/or drizzled over the baked chicken as well (as in bottom pic2)
So there ya have it... another fairly quick dinner ya can fix up fer a party'a 4 or more that's easy an fun ta prep... if ya give this a try a hope ya like it as much as we did :)
