My big Christmas breakfast dish this year.
WHAT YOU'LL NEED:
-12 large eggs
-olive oil (vegetable oil works fine too)
-Roughly 2 cups of fresh spinach
-Roughly 2 cups of chopped mushrooms (any mushrooms will do)
-1 small chopped white onion
-8 slices of potato bread, toasted
-1/2 cup milk
-1/2 a block of grated mozzarella cheese
-salt and pepper
-glass baking pan similar to the one pictured
-skillet
STEP 1:
Preheat oven at 350 degrees. While heating lightly brush the entire glass pan with olive/vegetable oil, then arrange toasted slices of potato bread on the bottom. This will act as your crust. Set aside for now.
STEP 2:
Add a splash of oil to the skillet. Cook mushrooms, chopped onion, and spinach in skillet over medium-high heat, start with the mushrooms as they'll take the longest to cook. After a good 7-9 minutes of cooking, pour mixture evenly into the toast lined glass pan.
STEP 3:
No pre-cooking of the eggs necessary. Just crack all 12 of them over the top of the pan mixture in even, open areas across the pan. Add 1/2 cup of milk then salt and pepper to preference, and finally top with grated mozzarella cheese evenly. Bake in oven for 25-30 minutes, 35 minutes if you want to completely hard boil the eggs.
Serve in cut squares and enjoy.
