I also make winter hats out of fleece! I used to make them as gifts until my parents convinced me to stop. Now I'm planning on making hats to sell on Etsy. My brother begged me for a custom Fox hat that year, so I obliged him for Christmas. It's not perfect, as it was my first time using that custom pattern I made, and I won't sell any of these types of hats until I improve the pattern. I learned a lot from it though!
