Ingredients:
* optional, not called for in recipe
1 cup (2 sticks) butter, softened (I went with unsalted)
1 cup firmly packed brown sugar
1/2 cup white sugar or coconut palm sugar
2 large eggs
1 tablespoon fresh orange zest
1/2 teaspoon orange extract
1/2 teaspoon vanilla*
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoons garam marsala
3 cups rolled oats
2 cups chopped walnuts (went with 1 cup pecans, which was broken up in a ziploc bag*)
- If you are nut allergic, PLEASE leave these out! -
large handful of raisins*
2 cups bittersweet chocolate chips (I didnt use the whole bag...I wanted to have a little leftover to nibble on :P)
1/4 - 1/2 cup water*
~ Preheat the oven to 350 degrees F
~ In a large bowl, beat the butter, brown and white sugars until creamy. Add the eggs, orange zest, vanilla and orange extract and beat well. [Here I also added the raisins, nuts and choco chips.] In a medium bowl combine the flour, baking soda, salt and garam masala. Beat the flour mixture into the creamed sugar mixture a little at a time until combined. Fold in the oats, nuts and choco chips. (See above.) If this mix is too 'floury' (and chances are, it will be) then add 1/4 cup water (or up to 1/2 cup) until you have the desired consistency.
~ Drop rounded teaspoonfuls onto baking sheet (I had mine covered with parchment paper, it keeps the cookies from sticking) and bake for 12 minutes, or until golden brown. (I cooked mine for 15 minutes - and please note your second batch will come out a lot better than your first!)
