Got the great recommendation from the above wonderful puppy... And it's AMAZING!
I cut the original recipe in half, and used ground flax seeds instead of pecans.. Sad kitty has no pecans...
1 1/2 c flour
1/8 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1TBSP cinnamon (this us actually double the recommended)
75ml vegetable oil
2 eggs
3/4 cup white sugar
1 cup shredded nashi (Asian Pear)
1/2 cup ground flax seeds
Dash of vanilla
Mix the flour, salt, baking powder and soda, and flax seeds together in one bowl, whisk the eggs oil, shredded pears, sugar (ummmmm sugar!) and vanilla together in another.
Fold into the flour mixture, put into bread pan. This is enough for one loaf..
Preheat oven to 330 (170) and bake for 1 hour., or until done.
Perfect just by itself, or if you want to go extra sweet I think a cream cheese icing would be ungodly good! Hope I don't devour this before the hubby gets home... (^.^)

Reminds me of carrot cake in many ways. It's that heavy bread, and a slight bit dry ( I think from the flax seed), but not in a bad way, would pair amazing with icing or coffee. I had a hard time stopping myself from eating 1/2 the loaf before my hubby got back.
I used nashi pears.. Japanese pears for this. I might add another 1/4 cup of them next time.

Reminds me somewhat of carrot cake in many ways. It would be great with extra spices. I really enjoyed the heavy texture, and the extra tiny grit of the flaxseed. It wasn't super moist..I was actually expecting it to come out a little doughy... But not all. Just very slightly on the dry side.
