I LOVE this dish! One of my all time favorites... And if you get the Aji small enough you can eat the whole fish, head and all. ( I have slightly bigger ones here)

300 grams of horse mackerel. ( about 4 fish about the size of you hand) gutted cleaned and dried. You can leave the heads and tails on.
1 dried chili pepper chopped up ( I omitted this for the lil one sake)
1/2 an onion thinly sliced
1/2 a red and 1/2 green bell pepper thinly sliced
1/2 tsp salt ( rub the fish with this after it is cleaned and dried, don't forget the inside of the fish)
Flour for coating the fish
Oil for frying the fish (170C for about ten minutes)
The pickling juice
2 TBSP soy sauce
2 TBSP sugar
1 cup vinegar
1 tsp salt
1/2 cup water
Mix the pickling juice, then add the sliced veggies. Next clean, dry, rub the fish with salt, then coat them with flour and fry.
Put the hot fish in a glass pan, then pour the pickling juice and veggies over it. Let sit for at least an hour, but even better if you refridgerate over night. It is excellent cold!
