I've actually just recently gotten back into Animal crossing and I don't know why, but almost all my neighbors have trusted me to come up with some sort of greeting or ending for their sentences... XD
One ends his sentences with IN BED!
One ends with BELIEVE IT even though I absolutely hate dubbed Naruto, and one ends their sentences with wee~

I was more into changing their greetings than their catchphrases. I've had some of my townsfolk greet me with "PENIS!!!", "This is SPARTAAA!!!", "EEEEEYAAAAARRGH!!" and in the case of Melba, "FATALITY!!", (her default catchphrase is "toasty", so it was the only logical choice to my sleep-deprived brain).
