It's such a fascinating thing. It's a natural processing method that makes perfect sense.
What I truly love is that it brings forward the civet, an underappreciated class of animal. It's so interesting because, like the raccoon and the wolverine, it's a throwback, representing a basal form of canine/feline carnivore. It is like the miacis, I believe, one of the early catdogs.
